I put this recipe together as part of Loving Earth's Maca Powder Appreciation Week. This is my favourite way to take Maca, other than in a spiced hot chocolate of course. Some people find the taste of Maca a little earthy, but when you combine it with coconut milk and dates, it turns into a sweet caramel malty taste sensation. Try it out - I think you'll agree!
Serves 2 as a Snack/Dessert
*Always use certified organic ingredients whenever possible*
¾ c coconut milk OR ¾ c water + 1 Tbsp desiccated coconut
1 Tbsp maca powder
2 medjoul dates
1 Tbsp almond/brazil/cashew nut butter
½ tsp cinnamon
½ tsp vanilla powder OR 2cm vanilla bean
Pinch sea salt
1.5-2 c ice
1. Whizz it all together, then sprinkled desiccated coconut "snow" on top
2. Enjoy in front of the fire, with a spoon if needs be
