A delicious non-dairy cream to serve wherever you would serve normal cream or yoghurt. The perfect accompaniment to my Raw Afghan Brownie. Try it out, you'll be in dairy-free, vegan, paleo heaven!

Makes 1 cup

Always use certified organic ingredients where possible

1/2c cashews/macadamias/blanched almonds (i used a half/half blend of the first two)
2 tsp yacon syrup/coconut nectar/agave syrup/brown rice malt syrup OR 1 medjool date
1 Tbsp white chia seeds
3/4c water
½ tsp vanilla powder
Pinch organic sea salt
½ tsp cinnamon (optional)

c = 250ml cup, tbsp = 15ml tablespoon, tsp = 5ml teaspoon

How to
  1. Soak nuts for at least 2hrs (see the handy soaking chart in this post for different soaking times).
  2. Drain and rinse nuts, then blend with remaining ingredients in a high speed blender for a few minutes until silky smooth, scraping down the sides in between if needed.
  3. Chill at least 1hr before serving or preferably overnight - the cream will thicken in the fridge.
