Chai Rice Pudding
A cosy chai spiced rice pudding with cinnamon, cardamom, ginger, turmeric, raisins and coconut milk - vegan, plant-based, and low sugar.

- 1 c brown short grain rice
- 2 c water
- 1 can coconut milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp cardamom
- 1/4 tsp turmeric
- pinch ground pepper
- pinch sea salt
- 1/4 c raisins
Cook rice with water 10mins, lid on
Add remaining ingredients and simmer with lid on until cooked and creamy, approx 20mins
serve hot, topped with shredded coconut and fruti of choice
