Chai Rice Pudding

A cosy chai spiced rice pudding with cinnamon, cardamom, ginger, turmeric, raisins and coconut milk - vegan, plant-based, and low sugar.

Ingredients

  • 1 c brown short grain rice
  • 2 c water
  • 1 can coconut milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp cardamom
  • 1/4 tsp turmeric
  • pinch ground pepper
  • pinch sea salt
  • 1/4 c raisins

Instructions

  • Cook rice with water 10mins, lid on
  • Add remaining ingredients and simmer with lid on until cooked and creamy, approx 20mins
  • serve hot, topped with shredded coconut and fruti of choice
