A bit of a personal one from me this week, but one I wanted to share. A few weeks back, I lost one of my closest friends, someone who's been a massive part of my life the last 21 years. If you follow me on Facebook or Instagram you might have read a bit about it, but I haven’t said much here. We met back in 1995, our first year of high school - me at the ripe old age of 11, her just gone 12. Since then, we've lived life together, through different countries of abode, and even had our own pop band (if you want to see one of our old music vids, you can find it and have a chuckle via the archives of YouTube here...).
Ever since she passed though, I’ve felt I wanted to honour her somehow, in some small way. Even though doing anything on a food blog seemed infinitely unimportant compared to the magnitude and amazingness of her life. But five weeks later, that feeling of wanting to share something for her is still there. So, I asked some of girlfriends, if I was going to post a recipe for Joy, what would it be? What were her favourite foods? What would she want to chow down on if we had one last girls night? One of the replies made me laugh, because, it was so Joy. Sausage rolls. Yep - the regular kind you find in the freezer aisle, all meat and pastry, chuck ‘em in the oven for 20 mins, and hey presto, with a bottle of tom sauce, dinner is served. Yes, J loved her food, but she was equally happy with a bag of doritos or plate of saussie rolls, as she would be with a gourmet meal.
So here they are – my ode to J, my Something Special Sausage Rolls. I hope she'll look down, and have a wee laugh at me sharing these bites of joy with you now. Because she certainly was something special to me.
PS – in case you’re wondering, these are of course not your regular old sausage roll. No meat saussie, no white gluten pastry, no butter to bind. Nope, these are certified verified plant-based whole food love bites, complete with a dairy and gluten free pastry. Does that mean they pass as health food, suitable for every day? I think so. Keep your partner/son/brother away though – these ones will definitely get demo'd.

6 vegetarian sausages (375g)
Buckwheat pastry1 3/4 c buckwheat flour1/4 c arrowroot/tapioca flour1 tsp baking powder1 tsp sea salt1/4 c coconut oil, melted1/2 c waterPlant-based milk to bind
To topPlant-based milk and white sesame seeds
c = 250ml cup, tbsp = 15ml tablespoon, tsp = 5ml teaspoon
