Talofa from Samoa! Yep, we’ve sneaked across the Pacific this week for a little ray of sunshine. If you’re on my Insta you might have caught a few of my insta stories thus far. Let’s just say it’s stunning.

It’s our first time to Samoa, and I’m totally sold already. Amazing weather (25-30+ C right now), only 4 hours from Auckland (yay for toddler travel), gorgeous clean beaches covered in golden sand, and crystal clear waters with coral and fish below.     Now I know you already know how to make a regular hot choc, but this one’s a little spesh. A little more fancy if you will. Yes, this Mexican Hot Chocolate is… 

    • An easy peasy pre-mix, done in 5 minutes,
    • No fancy blenders required,
    • Low in sugar and GI (unlike most store-bought hot choccie mixes),
    • Loaded with antioxidants from the cacao and spices, as well as providing you with a metabolism and circulatory boost (great for weight management, underactive thyroids, and if you get cold extremities), then
    • When the craving hits? Just add water and (plant) milk!

    Plus, it’s made a little extra luxe thanks to shavings of dark chocolate throughout. Vegan, dairy-free and low sugar bliss! Beware, you may want to dip spoonfuls of peanut butter into this one, it’s that good…

    Makes 2/3 cup (enough for 10 serves)

    Always use certified organic, local and fairly traded ingredients wherever possible

    Hot Chocolate Mix

    1/2 c cacao powder
    25g dark chocolate, grated
    1 tbsp cinnamon
    2 tsp ginger
    1/2 tsp vanilla bean powder
    1/8 tsp chilli powder
    2 pinches sea salt
    3 tbsp coconut sugar

    For each serve
    1 tbsp Hot Chocolate Mix
    1/2 c water
    1/2 c plant-based milk (almond, rice, oat, soy, and coconut will all work great here)
    Extra grated dark chocolate
    c = 250ml cup, tbsp = 15ml tablespoon, tsp = 5ml teaspoon
    How to
    1. Mix all ingredients in a glass jar, reserving some of the dark chocolate to top.
    2. To serve, add 1 tbsp of the mix to a mug, 1/2 cup of boiling water and stir to combine, then top up with hot milk. Or if you’re pressed for time, make like you would a regular milky tea - ~3/4 c boiling water and rest cold milk straight from the fridge. Drink and enjoy!
    3. Dry mix will keep in a sealed jar in the cupboard for up to 6 months.
    Notes
    • Make it sugar free: Omit the coconut sugar, and add a dash of stevia instead (to your taste - stevia is super strong so you won't need nearly as much).
    • Make it soy free: Simply use another plant-milk option - almond, any other nut/seed, coconut, rice, oat and organic soy are all fab options. Try my Almond, Coconut & Sesame Milk recipe here, or my nut-free Sunflower and Coconut Milk here for a homemade version.
    • You can also swap the coconut sugar to any other preferred sweetener you like - monk fruit powder or yacon powder as part of the dry mix, or when you’re making up with milk, coconut nectar, brown rice malt or low GI yacon syrup.
    • This hot choc is only modestly sweet (when made with 1/2 water and 1/2 unsweetened plant milk), so if you prefer it slightly sweeter feel free to add a little more at the end.
    • For a frothy latte like the one I've made above, blend the hot milk and water in blender before adding, or just add boiling water and cold milk for a quick instant no-clean-up option.
    • For a creamier and more decadent hot choc, feel free to use all plant-milk (no water).
